healthy savory corn chowder

I realize its still summer but chowder sounded really yummy to me so my mind went to work on how to make this creamy and healthy!!!! you will need: 2 cans of unsweetened coconut milk 2 grated zucchini's chopped yellow and red cherry tomatoes fresh basil chopped about 2 tablespoons( use less if not using fresh) fresh oregano chopped about 1tablespoon rosemary about 1tsp I did not use fresh cause I didn't have any or I would have) minced garlic about 1tsp you can use more or less depending on how garlicy you like things 2 ears of fresh corn and just slice the corn off the ear and add to the pot 5 potatoes( I baked these in the oven cause I only warmed my soup to keep it "raw" then chop the potatoes and add them to the pot I would cook them before adding them to the pot even if you cook your chowder to boiling hot, I think it would taste better going that route add salt to taste you can add any other veggies you want and omit any if ya want but that's what sounded good to me

my raw food conclusion

My 30 day raw food challenge has come to an end, so my review on this lifestyle.....when I first started I ate alot of nuts and veggies with some fruit mixed in, but after doing more research towards the end, I switched up and did more of the 80/10/10 approach. Basically I ate either smoothies or juiced both fruits and veggies or I ate more of the water type fruits to give more hydration since my body needs to get fluids in first thing in the morning then for lunch I ate a ton of fruit with occasional veggies mixed in then for dinner I ate a ton of veggies either in big salads or I would make a big veggie dish like a pasta dish made out of veggies. It was tough at first because of the toxins leaving my body, I no longer have headaches and have had them for a couple of weeks, my acne broke out the first few weeks as well due to the toxins too but I am noticing this last week my skin is clearing up and starting to glow, I also noticed my eyes changing colors, from a dark brown to a lighter brown and actually becoming more green. I had seen videos and have heard of this happening, basically to sum it up, since my body is cleaning out all the junk my eyes are becoming clearer, so when they say you are what you eat, I think that means thru your eyes, when you eat junk your body gets clouded and so do your eyes they become darkened and cloudy as your body on the inside becomes clear so do your eyes, its quite fascinating really, so after all the toxins released and I feel better, I have actually enjoyed this lifestyle that I think I want to continue it. I feel better than I ever have before and I find that spiritually I am more in tune, and I can think much clearer, so why would I give that up??? Doesn't make any sense why I would. The only down side is I didn't lose weight, I do feel that I might have gained some not alot but some, but I also think that has to do with my body not having adjusted to this yet which is another reason I want to continue. I believe that losing weight isn't just about eating right or exercising I do believe everything needs to be in line from your health and our mental abilities tend to hold us back, I will keep you posted as time goes on to let you know how I'm still feeling about this lifestyle.

oriental wild alaskan halibut

So tonight I am making some wild Alaskan fish, while I am still eating raw foods I do incorporate a meat on occasion because I do think there are vitamins and nutrients that are beneficial too, last night I attended a raw food pot luck which gave me great ideas my friend Laura gave me this yummy what tasted like to me an oriental sauce you can find the recipe here http://myhealthyjourneytowellness.blogspot.com/2013/08/vegetable-marinade.html?m=1 so tonight decided to pour that marinade on my halibut, can't wait this would be great paired with an oriental salad where you could also add some of this marinade on it as well but tonight we are having fresh corn on the cob, and baked potatoes topped with avocado, yes its way delicious and so much healthier than sour cream and butter!! Also a yummy side salad with lots of variety of veggies cut up in it....

my healthy take on tuna/chicken salad wraps and fruit salad wraps

So today I made me this delicious fruit veggie burrito and I made up some tuna for the kids and realized I didn't have bread so I wrapped the tuna in a big collard green leaf then that made me think of a yummy tuna or chicken salad wrap they have at paradise bakery so here is my healthy version of fruit tuna/chicken salad wrap from paradise bakery 1can of tuna/albacore/ chicken 1-2 tablespoons of olive oil mayo or avocado mayo ( i like avocado and Greek yogurt mixed together for a healthier mayo) then add fruit like grapes or blueberries whatever your heart desires add in some walnuts add in some celery if its too dry add in a little more mayo then wash and cut of the stem of a big collard green leaf and wrap your tuna salad plum full and roll it up cut in half and devour to hearts content yummo!!! My son had one of these yesterday and he loved it with the collard green even my min healthy hubby had one too and loved it here's the recipe for my fruit salad wrap if anyone is interested in that blueberries mango chopped up black berries strawberries 1/2 apple of choice a handful of chopped spinach leaves you could even add some chopped nuts of your choice then take the other half of your apple 2 caps of apple cider vinegar and a small little bunch of cilantro and blend together then pour on your fruit mixture and wrap them in a big collard green leaf and enjoy a fruit salad wrap yummy!!!!

mango beet dressing/ sauce...dont knock it til you've tried it

So tonight I decided to get a little creative and make a completely different kind of dressing for my salad, I got the idea from fully raw Facebook page from her marinara sauce, this dressing turned out yummmy!!! I made my kids try it and they said yeah its pretty good 1 1/2 ripe mangos(the ripeness makes a big difference they gotta be soft and mushy to really have a sweet yummy flavor) 1 beet not cooked( I'm not sure how well this blends in a non high power blender because I use a blend Tec and it blends it amazing) 1/2 bunch of cilantro( I'm on a cilantro kick lately, but its half of the whole bunch you buy at the store) and a tiny bit of cinnamon then blend it altogether til its nice and smooth and pour it all over a delicious salad, this could also be a good sauce for salmon, or a fruit salad its a ver versatile sauce but it was delicious for my salad

avocado dressing a must try....

1-2 ripe avocados cilantro(this is a by taste thing I added the stems a small bunch) almond milk this is again by a preference I added about 1/4 cup to start and drizzled it in until I got the thickness I wanted salt to taste 1/2 tsp of minced garlic just blend until smooth simple easy and yummy!! update**** I added 2 caps of Braggs apple cider vinegar to this and that was great too!!!

quinoa (keen- wa) zucchini boats

1 cup quinoa 2 tomatoes chopped 1 bunch of spinach chopped Celtic sea salt to taste 4-5 zucchini's cut in half then gutted but save the insides cook quinoa as directed once done and has slight a little water left add your veggies and salt and chop up the insides of the zucchini's mix altogether and scoop into your gutted zucchini's then bake til tender at 350 you can add an Italian type of dressing for more flavor if you wish but I liked them as is
