tapioca pudding/rice pudding

I have always loved tapioca pudding for some, they don't like the texture, but that doesn't bother me, today I made my version ( healthy version) of tapioca pudding 1 can of coconut milk( have you noticed I use this alot, I love it) 3T of white chia seeds 1 tsp of vanilla extract 1 T of coconut flour stevia, honey or maple syrup which ever you desire to taste I prefer stevia myself you can either leave it at that or you can add cinnamon to make rice pudding I would omit the chia seeds and add brown rice and cinnamon maybe some nuts fried fruit etc....
